Grilled pork – the attractive specialty in Lao Cai (thịt lợn nướng)

Grilled pork is a popular dish in a lot of nations. However, in Lao Cai it is specially cocked by “Giay” people (“giay” is the name of an ethnic nation in Lao Cai).

This dish is seen as a specialty by Giay people. It is an important part in the wedding party as well as in their festival.

According to Giay people, in order to have the delicious grilled pork, they have to choose the good pig which is not fat but not thin and old enough.

The pig is cleaned but not cut into many parts. People just take it’s viscera out then mix spices with the pig. Next is the grilled process.

The qualified grilled pork is the one grilled in 6 hours up to the time it has deep yellow color and brittle skin.

The spices of this grilled pork include many things, they are dried onions, ginger, pepper, anise, … all of them are mixed with fish sauce, salt, and wine then applied on the pig’s inside. That spices are very important to have delicious grilled pork.

This grilled pork is used in weddings, festivals, and obsequies as an essential part.
