Ingredients

- Shoulder lean meat

- Salt

- Black sugar

- Five spice powder

- Seasoning seeds

- Soybean sauce

- Garlic

- Fried dry ram cake

- 2 bunches of noodles

- Bean sprouts, basil, baby arugula

How to cook Hoi An cao lau

- Soak the meat in diluted salt water in 15 minutes, wash carefully and marinate it with salt.

- Chop meat into big pieces then put sugar, five spices powder and seasoning seeds in to marinate.

- After 1-2 hours marinating meat, pour the soybean sauce in with garlic.

- Heat the pan to fry the meat until it turns into yellow color in both sides.

- Boil the marinated meat water.

- After 1 hour boiling, pour the marinated meat water into a bowl.

- Fry the meat until it is dry.

- Take it out and chop the meat into thin pieces.

- Soak the noodles in hot water in a few hours, soak and pour down the water several times to get rid of noodles oil. Before taking the noodles out, boil it in about 1 minute.

- Put the bean sprouts, noodles and meat in the bowl. Pour the broth in and put fried ram and chilli powder in.

- It will be more delicious if you pour some soybean sauce in.
