How to make chilli oil of Hue beef vermicelli

Ingredients:

- Hue chilli powder: 50 gr

- Chopped purple onion: 1 spoon

- Cooking oil: 50 ml

Heat the cooking oil in the frying pan, turn off the stove, put chopped purple onion in and stir it. When purple onion turns into ice-cream color, put Hue chilli powder in and wait until the pan is getting cold, remove the chilli powder.

Ingredients:

- Chopped red chilli: 100 gr

- Garlic: 1 chopped spoon

- Citronella: 5 chopped bulbs

- Pineapple: 1 chopped pineapple

- Sugar: 2 spoon

- Salt: 1 spoon

- Bean oil: 50gr

Heat the cooking oil in the frying pan, put chopped garlic and citronella in, then put the pineapple in. stir them together in 5 minutes and put sugar and salt in. Finally, put red chilli in and stir in about 15 minutes, turn off the stove.

Vegetables:

- Bean sprouts

- Shaved banana flower

- Herbs

- Salad

- Mustard greens

- Shaved water spinach

- Onion: chop in thin pieces and soak in ice or cold water

- Lemon, chilli

- Original fish sauce

How to cook Hue beef vermicelli

Ingredients:

- Pork leg: 1kg front pork leg

- Muscle beef: 700 gr

- Salt: 1 small cup

- Hue shrimp sauce: 100 gr

- Sugar cane: 1 cane

- Citronella: 5 bulbs

- Old ginger: 1 bulb

- Purple onion: 50 gr

- Pepper: 2 café spoon

- Fish sauce: 1 small cup

- Fresh vermicelli (big size): 4kg

- Beef (or pork) blood: 100 gr

- Hue lean pork paste: 250 gr

How to cook Hue beef vermicelli in Hue style

- With pork leg, shave its fur and remove the outside trotter, wash it carefully. Put a small cup of salt in a basin, pour water in, put the pork leg and beef in, soak in 1-2 hours.

- With sugar cane, chop into 5cm pieces, each piece is chopped into 4 pieces vertically. Boil them in a pot with 3l water in 30 minutes then take them out.

- Boil 1l water in a pot. Put the shrimp sauce in and stir. When the water is boiled, remove the bubbles. Boil it until you smell tasty. turn the stove off and leave it cold.

- Wash the citronella carefully, pound it and chop into 2 pieces vertically.

- Bake the purple onion and old ginger until their shells get burned, remove their shells and pound.

- Chop the beef ( or pork) blood into big pieces ( in big toe size).

- Chop the lean pork paste into 2 equal pieces then chop into thin pieces.

- After soaking the pork leg in salt water, wash it several times. Chop into 1.5-2cm pieces.

How to cook:

- Put the sugar cane pot on the stove, put the beef in. when it is boiled, remove the bubbles.

- Put chopped pork leg, 1 spoon of salt, ginger, onion, citronella and shrimp sauce in.

- When the beef and pork leg are ripen, take it out on a plate. Put a spoon of salt, fish sauce in. finally, put beef (pork) blood and chilli oil in.

Notes:

- Remember to remove the bubbles in the pot.

- Pork leg must be remove its fur carefully.

- Beef should be stewed before eating.

- Pork leg should be removed immediately when it is ripen.

- Scald the vermicelli then take it out in the bowl

- Put beef pieces in the bowl

- Pour the broth in.

- Put the onion, herbs and pepper on the vermicelli.

- You can scald banana flower and water spinach to eat with.

- The sour taste of lemon and spicy of chilli will make this dish more delicious.
