Bai Dinh pagoda is a large population known as many records such as: the largest pagoda of Vietnam, the biggest gold - plated copper of Asia and the longest lobby in Asia. The pagoda is located at the western of the ancient capital Hoa Lu, belonging to Gia Sinh commune, Ninh Binh. It is far about 15 kilometers from Ninh Binh province and 95 kilometers from Hanoi. This charming cluster of cave temples is a couple of kilometres north of Tam Coc. The Lower Pagoda is located at the foot of the outcrop, from which it’s a climb of about 100 steps to the Middle Pagoda, then a shorter but still steep ascent to the Upper Pagoda. Inside each cave temple, looming statues and the smoke of burning incense create an otherworldly atmosphere. Outside, there are some incredible views of the countryside.

Phat Diem Cathedral is one of Vietnamese architectural masterpieces, covering over two hectares (five acres) and consisting of a lake, a grand Cathedral with five separate side chapels, three artificial grottoes, and a majestic bell tower named Phuong Ðinh.

Of special interest for the visitor to this particular Catholic Church, is its unique style of architecture, which resembles a budhist temple or pagoda, characterized by several tiers of overhanging curved roofs.

Ninh Binh’s goat meat taste better than other regions because two reasons: many lime stone mountains which are suitable for raising goats; in order to have a good rare goat meat dish, local people have to perform many steps from the processing procedure to the mixture procedure. Specially, dishes do very well re-goats, fresh meat and crispy, served with herbs such as ginger, chilly, lemon, seasoning powder, and citronella; all these ingredients and spices are well-mixed with goat meat. Burned rice is one of the special dishes of Ninh Binh. This dish is made from cooked rice sliced into round shapes. After cooled down, the round slices are soaked into hot oil pan until they turn yellow. Beef and pig’s heart and kidney are crushed into thin slices and mixed with spices and ingredients like tomato, carrot, onion and mushroom. Then the mixture is well-fried and put into the burned rice bowl.

Eels are washed carefully with vinegar, removed the inside, mixed with spices like red chili, onion pepper, “nuoc mam” and then fried in hot oil until fragrant and yellow. Eel vermicelli noodles is often eaten with ginger, “la lot” and sourness of lemon juice converge on the eel vermicelli bowl that make a try worth a thousand words.
