You can buy fried rice anywhere in Ninh Binh, from cities to monuments such as Bai Dinh Pagoda, Trang An, Tam Coc…, even along the street, tourists find no difficulty to buy this tasty dish.


Hoa Lu has the advantage to raise goat. Goat lives in herds, on mountains and eats leaves. Goat is very nutritious and can be cooked in various dishes: raw goat with lemon leaves, goat spring roll, goat soup…

Raw goat with lemon leaves is a famous dish of Ninh Binh. To make this dish delicious, you have to learn a lot in every step. Goat must be brewed with holy basil leaves or duckweed leaves in 15 minutes to make it less smell.

Goat spring roll is another nutritious dish which is sour, sweet and the smell of forest that can’t be forgotten. Goat spring roll is eaten with fig leaves, guava leaves, star fruit, green banana, apricot leaves, herbs with soybean sauce and ginger.

Cybister is small like pinky finger with black wings, slightly hard, lives in water fields. Cybister’s legs, wings, stomach are removed when being cooked.

Is one of most famous dishes of Ninh Binh, fish salad attracts tourists by freshness and grease without fishy taste.

Snails in Ninh Binh are very rare, they only live in rocks and come out only in April to August. It’s very hard to recognize a snail, the local must get up really early to catch some of them.

The snail is chewy, sweet with the smell of herbs. It can be cooked into many dishes such as grill, fry with tamarind, boil with citronella…
