 I arrived in Hanoi in the early morning when the weather was still slightly cold. I was attracted by the smell from a small roadside food stall. 

"Please eat it while it is still hot!" - the waitress said as she was pointing at the bowl of "Pho" noodles in front of me. "Pho" noodles is a traditional food of Vietnam : white noodles with soup, topped with some slices of beef. It was served with a dish of herbs, beansprouts, some slices of lemon and chillis.

 I have eaten 'Pho' so many times. It's always a special food to me. From the first time I ate 'Pho' in America - which is millions miles away from Vietnam - I knew for sure that I would never forget 'Pho'. I can never descripe the taste of 'Pho' probably, it is so hard to find words to descripe it. Because to cook 'Pho', they have to prepare the ingredients for hours and hours.

The origin of 'Pho' is still a mystery. Some people say it came from France, some say it came from China, some insist that 'Pho' belonged to Nam Dinh Province, Vietnam. Wherever it came from, 'Pho' is still considered the soul of Hanoi cuisine.

" 'Pho' is a specialty of Hanoi ", a Vietnamese famous author - Thach Lam - wrote so in 1940s and it hasn't changed until now. It is a specialty of Hanoi not because only in Hanoi can people find 'Pho' because of its taste. Hanoi 'Pho' has a special taste that differentiate it from the others.

The taste of Hanoi 'Pho' is classic and homely, they stick to traditional ingredients - thin slices of beef, fresh green onions and herbs...

There is a fact that the most famous places with 'Pho' in Hanoi are usually located on old and small streets. Tourists when refuse trying 'Pho' on roadside food stalls, they lose the change to try the most delicous 'Pho' in Hanoi.

I have eaten 'Pho' so many times, as I have mentioned, and I will continue eating it for sure, even after going back to America. You know what, there are a lot of Americans who loves Vietnamese 'Pho' noodles just like I do!
